Recipe: Corn Dip

We’ve lived in the south going on 6 years and I can tell you wholeheartedly that nothing beats the food you will eat here. Especially when it comes to dips.

During football season a few years ago, we were hosting friends for a big game and a close friend brought a delicious corn dip. I was hooked after one bite. This dip is the right amount of spicy, sweet and crunch. Soooo good! And it seemed simple with only a few ingredients. It’s the perfect dip to bring to a friend’s house for watching any sport – not just football! Or maybe you’ll want to bring it to an oscar party this weekend?

After some begging and pleading with her, a few weeks ago I was able to get my hands on the recipe and wanted to share it. I promise, you will love this! You’ll probably be cursing me after you’re addicted though because this isn’t necessarily the best recipe for your waistline.

Here’s the simple ingredients…

Who knew? 7 ingredients = amazing dip!

You’ll start by leaving your 8 ounce cream cheese bar on the counter to soften. Once soft, toss it in a bowl and add 1 can of rotel…

Add 1 drained can of white shoepeg corn…

1 drained can of yellow corn…

and 1 teaspoon each of ground cumin, garlic powder, and chili powder…

Mix together and pop it in the microwave for 2-3 minutes…

Done…

The best chip for scooping is Fritos Scoops. You can go with something healthier too like cut veggies or crackers. But the corn chips are pretty good!

You’ll need that scoop in order to get more of the dip into your mouth…

So so so soooo good!

This tastes great warm or cold.

Football season isn’t too far off, right? No reason why I couldn’t share this with you in the middle of February. Isn’t there a draft coming up?
