recipe: light & delicious summer salad

with warm weather on the way, i thought i would share a recipe for one of our favorite summer salads. when the weather is hot and humid, and we aren’t up for eating something heavy at dinnertime, a light salad is the perfect dinner meal. during the summer we have this upwards of 4 times a week. i love that it’s easy to make and that i generally have all of the ingredients on hand.

oh, and did i mention this salad is easy to make?

here are the ingredients…

just add your favorite greens – we use either a butter lettuce blend or mixed baby greens…

chop up some cucumbers – if you like them. i take the seeds out of ours….

 

we mix up which fruit we add in – sometimes pears, sometimes strawberries, sometimes mandarin oranges. today, it’s pears.

then top the salad with crumbled gorgonzola and honey roasted slivered almonds or walnuts…

our favorite dressing to top this salad is newman’s own light raspberry & walnut – so good!…

toss and serve…

you can mix up not only the type of fruit, but also the cheese and the nuts…even the dressing. but this combo is so delicious with the right amount of sweetness, so its the way we assemble our summer salad. if we want something more substantial, adding grilled chicken on top is delicious as well πŸ™‚
