Dinnertime this week has been easy-going and carefree. When we have a busy week of sports and after-school activities, our meals tend to be planned day of. We still eat healthy and it’s a nice break from the kitchen for me!
Last week on my meal plan we had grilled chicken, rice and veggie’s one night. The veggie dish was this awesome snap pea & asparagus sauté with a bit of sesame oil. SO yummy! Easy and healthy too!
Just heat a few tablespoons of olive oil in a pan…
When it’s hot, throw in the veggie’s…
After 10 minutes, add some salt & pepper – or even some crushed red pepper flakes if you like a little heat. Let them saute for another few minutes until cooked but still crisp.
Top with a few dashes of sesame oil and serve right away…
Easy, quick….delicious!
