recipe: homemade marinara sauce

did you know that making your own red sauce is not only healthy but inexpensive? it’s also very easy to make!
all you will need is olive oil, 1 medium onion, 2 carrots, 2 celery stalks, a few garlic cloves and 1 large can of crushed tomatoes…

first you’ll heat some olive oil over medium-high and then add your finely chopped onion, carrots and celery…

after everything is soft (about 7-9 minutes), you’ll add the garlic and some salt and pepper. then the crushed tomatoes…

it simmers for about 40 minutes on low until it’s ready to be heaped onto a bowl of multi-grain (or regular) pasta…any shape, of course. our family loves angel hair…

don’t forget the parmesan…

i never purchase jarred pasta sauce unless i need it for a specific recipe. jarred sauce is inexpensive too, but i love this version because it’s a great way to sneak in a few extra vege’s the kids don’t know about.

if you like your sauce on the smooth side, just run it through a food processor in small batches.

and to really help you out during the week, make a double or triple batch of the sauce. that way you can store some in the fridge or freezer to have on hand when the need arises. i leave some in the fridge all week, then all i need to do is boil some noodles, throw together a salad/bread and dinner is ready.
