To make, place the chicken breasts inside the crock-pot…OH, did I mention you can pop the chicken breasts in frozen? I do that all the time!…
Mix the broth with the taco seasoning…
Hot, mild or even low-sodium – recipe will turn out perfectly.
Pour the mixture over the chicken…
Cook on low for 6 hours…
When the chicken is done…
Set the crock-pot to warm and shred the chicken, using 2 forks…
This is exactly why you need all of that liquid…it makes a wonderfully flavored sauce for the chicken tacos! As always, feel free to take this recipe and make it your own by adding anything else you like in your taco meat. I keep it simple to cater to all the tastebuds in the house.
We love a mix of soft and hard taco shells along with lots of toppings (black beans are also on our menu, but not pictured)…
Last week on taco night, we also tried a new recipe – jasmine rice fragranced with lime juice and fresh cilantro. It was pretty good and I’ll share the recipe later this week…
What’s taco night without a margarita?
Here is the recipe printable. Enjoy!
This looks amazing! I am thinking it would be delicious on a salad too. Thanks for sharing!!
hi karen!
how are you?
YES, you're right – would be good on a salad! 🙂

I have been making chicken taco meat exactly like this for years. It is good stuff. Now I make it with my home-blended fresh taco seasoning.
hi dina!
wow, homemade taco seasoning – sounds awesome! and a great idea because i do worry about how much salt (and other things) are in the little packets i tend to grab. good idea!!!
