Recipe: Jasmine Rice with Lime & Cilantro

Last week I tried a new side dish recipe to go along with taco night – jasmine rice with lime juice and fresh cilantro. The recipe was great and turned out to be the perfect addition to our taco bar.

Love fresh, simple recipes…and this one meets that requirement!

Start by sautéing a shallot for a few minutes and then add the rice for a few minutes as well. You’ll add a good amount of water along with the freshly squeezed lime juice and let the rice cook for about 20 minutes. Once the rice is cooked, fluff with a fork and add in the chopped cilantro.
