recipe: versatile butter cake

a few years ago i stumbled across a super easy butter cake recipe. it’s not only easy to make, but you likely have all of the ingredients on hand. when i choose recipes to keep, i aim for those that have items i generally have around. those kind of recipes really help when you’re in a pinch!

this recipe is great for a standard 2 layer cake or cupcakes or even a flat sheet cake. whatever way you choose to bake it, it’s easy and you will love it!
and the best part? you (or the kids) can dress it up any way you wish! yesterday? cream cheese frosting with sugar sprinkles πŸ™‚
here are the simple ingredients…

at this point in the recipe, you could just hand me a spoon. butter and sugar whipped together? yum!…

i resisted that urge…here is the final batter…

our 5 year old wanted cupcakes this week, so we grabbed the cupcake pan and liners…

filled the cups 3/4 of the way full…

15 minutes later…perfection…

once they cooled, we decided to whip together a quick cream cheese frosting. after a few drops of food coloring and some sugar sprinkles – heaven….for boys…
